No More Ground Beef and Lovin' the Turkey!

Dinner was so delicious!

We had turkey burgers with grilled pineapple and it was so yummy! That was my first time making grilled pineapple, y'all should try it sometime!

I'm so relieved that we don't ever have to buy ground beef anymore, we haven't since May. It took me forever to get used to eating turkey burgers with no sauce but I love it now. Luckily my hubby has always liked his burgers plain and dry so no more buying condiments in this house...yay!! Now I just have to work on cutting out the cheese because it's just extra calories that I don't need.

HELLO DELICIOUSNESS!

~Black Bean Spinach Enchiladas~

Ingredients:
{For the sauce}
3 cups organic low sodium vegetable broth
1/4 cup tomato paste
1/4 cup all purpose flour
2 Tbsp. olive oil
2 tsp. cumin
1/4 tsp. garlic powder
1/4 tsp. onion powder
1/4 tsp. chili powder
Salt/pepper

{For the enchiladas}
15 oz. can black beans, rinsed and drained
1 1/2 cups corn (I used frozen, thawed)
6 oz. fresh baby spinach
6 green onions, thinly sliced
1/3 cup cilantro, chopped
2 tsp. cumin
3 cups shredded 3 cheese blend (or pepper jack, etc.)
8 whole wheat or flour tortillas

Directions:
Make the sauce: in a saucepan, heat olive oil over medium heat. Add tomato paste, flour, 2 tsp. cumin, garlic powder, onion powder, and chili powder. Cook 1 minute, whisking. Whisk in broth, bring to a boil. Reduce to simmer, and cook until slightly thickened about 8 minutes. Salt/pepper to taste, and set aside.

Saute the spinach in olive oil over medium heat for 1-2 minutes until slightly wilted. In a large bowl, combine beans, 2 cups cheese, spinach, corn, green onions, 2 tsp. cumin, and cilantro. Preheat oven to 375. Lightly spray a 9x13 inch baking dish, and pour a small amount of the sauce to coat the bottom. Generously fill tortillas with mixture, roll up tightly with ends tucked in, and place seam side down in dish. Pour remaining sauce over the enchiladas, coating evenly. Sprinkle 1 cup cheese on top. Bake about 20 minutes, and garnish with cilantro and/or green onions (optional).

Peanut Butter Banana Roll Ups

How many of you have kids? How many times did you make a peanut butter sandwich for your kids? Here's a fun and much healthier way to incorporate peanut butter into your kids' morning routine. These are simple to make and are packed full of protein, fiber and potassium.

INGREDIENTS:
2 bananas, peeled
1/4 cup peanut butter (organic is best, I use PB2)
2 wheat tortillas

PREPARATION:
1. Place one tortilla on a flat surface and spread 2 tbsp of peanut butter on the tortilla to evenly coat.
2. Place one banana near the edge of the tortilla and roll it up.
3. Slice into 1/2 inch rounds and serve.

*If your tortilla bread is stiff, you can put it in the microwave in between two pieces of moist paper towel and heat for 15-20 seconds or until softened.

Enjoy!

Blueberry Maple Muffins

Can I just say that I'm making these again this week, I just absolutely LOVE this recipe!

Blueberry Maple Muffins

These were very easy to make and they tasted pretty good which I found surprising because they don't have that real sweet flavor like an original blueberry muffin from Starbucks! They turned out to be real moist on the inside and turned out perfectly done if you follow the instructions. It's nice being able to have a blueberry muffin without getting that guilty feeling afterwards lol.

Will I be making these again? Yes most definitely! Enjoy

1 Tbsp chopped green onion
1/4 cups diced tomato
1/4 cup packed, chopped fresh spinach

1/8 tsp freshly ground black pepper
1 small corn tortilla (optional)

Directions:
1. Spray a sauté pan (nonstick works best) with cooking spray and warm over medium heat
2.  Cook mushrooms and green onions for 5 minutes, or until shiitakes are cooked through
3. Add tomato and spinach; cook an additional 2-3 minutes, or until tomatoes have released some juice and spinach has wilted.
4. Mix in egg whites, cream cheese, salt and pepper. Cook, stirring occasionally until eggs become supple but remain soft, about 4 minutes. Serve atop a warm corn tortilla, if desired.

I ate it just as a scramble without the tortilla and it was delicious, enjoy!

Healthy Recipes

I love cooking and trying new recipes especially if it's Pinterest inspired!  No really, go ahead and check out my Pinterest page and you'll see thousands of recipes that I've been wanting to try lol. However, my eating habits have changed and I no longer feel the urge to cook fatty recipes unless I make it for my hubby.  I am on a journey to a better me and you know what they say.....only 20% is from physical fitness and 80% is what you do in the kitchen!  I will tell you that I know that's true because no matter how hard I worked out, I wasn't loosing the weight UNTIL I changed my eating habits!

This page will contain all my healthy eating recipes that I try along with my feed back and my own photo of that recipe.  If I didn't come up with the recipe, I'll add the link of where I got it from so I can give credit to the creator.  If you have a healthy recipe that you'd like to share, than please contact me.

Enjoy!
