God is Good



So many emotions that I've gone through lately in the past few weeks but God is good and I am so grateful....

I was able to have my mom come visit from Utah and stay with us for the past 2 weeks, I love and cherish those moments. Dropping her off at the airport yesterday and hugging out our goodbyes til next time was really unbearable....coming home to our house and not seeing her presence, I broke down and balled like a baby lol.

Than that same day, we were blessed with our 2nd healthy baby nephew...so happy to have another little Landry running around. I guess it gets me all the more excited for when we decide to make a family of our own.  :)

And recently I got excited because of a nice little check from my personal business that I started only a few months ago thanks to my coach Brandi who has been such an inspiration to me and is one amazing lady! It's nice seeing that my hard work is paying off and being able to work from home is honestly such a blessing. I plan on building this business for the long haul, I want to be able to stay home with our future little ones because we want them to grow in our home and not at a daycare. There are far too many moments that we don't want to miss out on so having me run a business from home is perfect for us. There are honestly a lot more reasons why I got into this business but my biggest reason is being here for our future kids.

God is good, life is a blessing and I'm one happy lady :)

Peanut Butter Banana Roll Ups




How many of you have kids? How many times did you make a peanut butter sandwich for your kids? Here's a fun and much healthier way to incorporate peanut butter into your kids' morning routine. These are simple to make and are packed full of protein, fiber and potassium.

INGREDIENTS:
2 bananas, peeled
1/4 cup peanut butter (organic is best, I use PB2)
2 wheat tortillas

PREPARATION:
1. Place one tortilla on a flat surface and spread 2 tbsp of peanut butter on the tortilla to evenly coat.
2. Place one banana near the edge of the tortilla and roll it up.
3. Slice into 1/2 inch rounds and serve.

*If your tortilla bread is stiff, you can put it in the microwave in between two pieces of moist paper towel and heat for 15-20 seconds or until softened.

My Progress in 3 Months >>> So exciting!!!!


As promised, here are my progress photos! This took a little less than 3 months because I started my journey on May 12th, 2014. But during the past 6 weeks is where I've noticed the biggest difference because of my new workout program that I started. This Monday will be the beginning of my 7th week with it, it's an 8 week program but I plan on restarting it over and doing a second round after the full 8 weeks.
I'll be starting my 2nd round on Monday August 25th so if you want to join me and we can do this together than please send me a message. I'm not going to accept too many people because I want to focus on each persons progress individually so don't hesitate if you're interested. For details about the program, you can contact me.

Berry Breakfast Bowls - French Toast Casserole

Berry Breakfast Bowls - French Toast Casseroles

Serving size: 1

INSTRUCTIONS:
2 Tablespoons berries
1 Slice bread  (I used wheat)
2 teaspoons pecans
1 egg 1 tablespoon milk
1/4 teaspoon vanilla
1/4 teaspoon cinnamon

DIRECTIONS:
Chop berries, bread, and pecans. Mix egg, milk, vanilla, and cinnamon in small bowl. Layer berries, bread, and pecans in a well greased ramekin or muffin tin. Pour egg on top and let soak for 15-20 minutes (or overnight). Bake at 350 degrees for about 40 minutes or until egg is set and absorbed.

Tortilla Pizza



How do you use up your ingredients before they go to waste?

Make up a healthy tortilla with all the healthy fixings and call it a tortilla pizza and BAM you got yourself a delicious and nutritious lunch!

Directions:
Whole wheat tortilla, topped with a smear of goat cheese or ricotta cheese, leftover grilled chicken, green onions, any other veggies  and a sprinkle of low fat mozzarella cheese.

Outer Thigh Progress


Woot woot! Look what's finally starting to show, my outer thighs are lookin' good!

Chicken Dog Salad

CHICKEN DOG MANGO SALAD

INGREDIENTS:
Organinc chicken dogs (microwave 35 sec)
Steamed baby broccolli
Raw shaved brussel sprouts
Raw organic kale chopped
Homemade mango salsa
1 tbsp raw chia oil or you can use hemp/flax/olive oil.
1 tbsp apple cider vinegar
Lemon juice from 1/2 a lemon
salt and pepper to taste

DIRECTIONS:
Toss it all together and you have a super scrumptious power lunch packed with the perfect balance of fat, protein and good carbs. A little salty with a little sweetness from the mango, yummmm!

Blueberry Maple Muffins

Can I just say that I'm making these again this week, I just absolutely LOVE this recipe!

Blueberry Maple Muffins

These were very easy to make and they tasted pretty good which I found surprising because they don't have that real sweet flavor like an original blueberry muffin from Starbucks! They turned out to be real moist on the inside and turned out perfectly done if you follow the instructions. It's nice being able to have a blueberry muffin without getting that guilty feeling afterwards lol.

Will I be making these again? Yes most definitely! Enjoy

Hummus Veggie Wrap

Lunch today consisted of one of my favorite veggie wraps....



HUMMUS VEGGIE WRAP:
Whole wheat wrap with spinach, cucumbers, tomatoes and a little bit of hummus.

Drizzled Apples



Dessert anyone? This is an easy delicious sweet treat!

Ingredients:
Sliced apples
Honey
Raw nuts of choice (optional)
Chocolate chips (optional)

Put it in the oven for just a few minutes to get them nice and gooey!

Miraval Scramble

Today's breakfast was delish!




Miraval Scramble

Ingredients:
Coconut oil spray
1/4 cup diced fresh shiitake mushrooms
1 Tbsp chopped green onion
1/4 cups diced tomato
1/4 cup packed, chopped fresh spinach
3 egg whites, lightly whisked
1 Tbsp low fat cream cheese
1/8 tsp sea salt
1/8 tsp freshly ground black pepper
1 small corn tortilla (optional)

Directions:
1. Spray a sauté pan (nonstick works best) with cooking spray and warm over medium heat
2.  Cook mushrooms and green onions for 5 minutes, or until shiitakes are cooked through
3. Add tomato and spinach; cook an additional 2-3 minutes, or until tomatoes have released some juice and spinach has wilted.
4. Mix in egg whites, cream cheese, salt and pepper. Cook, stirring occasionally until eggs become supple but remain soft, about 4 minutes. Serve atop a warm corn tortilla, if desired.

I ate it just as a scramble without the tortilla and it was delicious, enjoy!
